Crockpot Chicken and Dumplings

This is a recipe that is perfect for a cold winter night! I really should use my crockpot more often...
I don't follow recipes very well, and usually make up the amounts I put in, but things turn out good anyway.

About 2-3 lbs of chicken frozen (probably boneless, could be thighs or breast)
1 cup frozen peas
1 cup sliced carrots
2 medium potatoes cut into bite sized pieces
1 can cream of chicken or celery soup
1/2 can of water (or a little more, if it's too thick)
1 can of biscuits

Mix all ingredients, except the biscuits in your crock pot and set the crock pot on High. I usually combine the veggies and the liquid ingredients and put those on the bottom, and then put the frozen chicken on top. Cook for about 5 hours. You can use the low setting too, if you are going to be gone all day -- cook it 8 or 9 hours instead...
Add the not-yet-cooked biscuits on top of the chicken mixture so that they cover everything. Put the lid back on and continue cooking until the biscuits are done (about 20 min).
